Asparagus Soup

Enjoy the rich benefits of asparagus. High in fibre, folate and vitamins A, C and K. This warming soup is filled with nutritional goodness and an ideal meal for weight loss.

Ingredients
2 tbsp coconut oil
3 medium onions, chopped
1.5kg asparagus, trimmed, chopped
2L chicken stock
1 cup baby spinach
Salt and pepper, to season
Coconut yoghurt, to serve
Fresh asparagus, trimmed, shaved, to serve
Steps
- Melt coconut oil in a large saucepan over medium heat. Add onions. Cook, stirring occasionally, for 10 minutes or until softened.
- Add asparagus and stock. Bring to a boil. Reduce heat to low. Simmer for 10 minutes or until asparagus is tender.
- Stir in baby spinach until wilted.
- In batches, ladle mixture into a blender or food processor and blend until smooth. Season to taste.
- Serve topped with coconut yoghurt and shaved asparagus. Season with extra black pepper.
Recommendations
For a herby twist, add a handful of fresh basil leaves with the spinach.
Soup can be up to 2 days ahead of serving. Any leftovers can be stored in the fridge for up to 3 days.
