Homemade Tzatziki

A creamy, herb filled sauce that can transform any meal from basic to brilliant.

Ingredients
3/4 cup greek yoghurt
1 Lebanese cucumber, peeled, finely chopped
¼ cup fresh mint leaves, finely chopped
2 tbsp fresh dill, finely chopped, plus extra to serve
1 clove garlic, crushed
2 tsp lime juice
Salt and pepper, to season
1 tsp extra virgin olive oil
Steps
- Mix yoghurt, cucumber, mint, dill, garlic and lime juice in a small bowl until combined. Season to taste. Drizzle with oil and sprinkle with extra dill.
Recommendations
Tzatziki can be served as a dip with raw cut vegetables and bread, or with Wilted Kale and Roasted Chickpeas, Roasted Sweet Potato Wedges or Zucchini Fritters. You can also serve it as a sauce for roasted meats and vegetables, or as a spread for wraps and sandwiches.
Use kefir instead of Greek yoghurt to increase your probiotic intake.
