Slow Cooked Oat Groats

Wake up to a bowl of nutritious and warming oat groats - the perfect start to a day!

Oat groats are the whole oat kernel with only the inedible hull removed making them the least processed oats with the highest protein.

Prep Time: 5 minutes
Cook Time: 7 hours
Servings: 4

Ingredients

½ tsp coconut oil

1 cup oat groats

pinch sea salt

¼ cup dried sultanas

1L coconut milk

1/3 cup honey

2 bananas, sliced

125g blueberries

¼ cup sliced almonds

2 tsp chia seeds

Steps

1.     Grease the bowl of a 4-litre capacity slow cooker with coconut oil.

2.     Place oats, salt, sultanas and milk in slow cooker. Stir until combined.

3.     Cook oats on low for 7 hours. Stir mixture to properly combine. Add extra milk if you desire a looser consistency.

4.     Spoon into bowls. Top evenly with honey, banana, blueberries, almonds and chia seeds.

Recommendations

Where possible, use organic oat groats. You can swap sultanas with other dried fruit such as cranberries or chopped apricots. You can also leave the dried fruit out if you prefer.

If you do not have a dairy intolerance, you can use regular cow’s milk instead of coconut milk or use water.

You can also swap oat groats with buckwheat groats.
